Arsenic
All of us know by now that eating too much fish can cause high levels of mercury in the hair. But we often see elevated arsenic in hair and urine specimens as well, and I have generally attributed that to the use of arsenic containing insecticides on our crops.

One of my patients with high arsenic did some of her own research and discovered that rice is an especially large source of arsenic, perhaps with higher levels in rice from Asia, but also here in the states. The growth of rice depends on lots of ground water, and it is this ground water that picks up the arsenic from chemicals previously used on the soil and transfers it into the rice. This patient ate as much as 1 pound of rice per day over a long period of time.
